These sliced potato cottage fries are crispy on the outside and soft and fluffy on the inside. Delicious served with your favorite dip and are ready within 30 minutes. They make a tasty appetizer, side dish, and are always great for game day or family gatherings served with dip.

4-5Large Potatoes
2TablespoonsOlive oil
½TeaspoonDried herbs
⅛TeaspoonSalt(large pinch)
⅛Teaspoon Ground pepper
Instructions
How to make homemade cottage fries
Preheat the oven to 220°C/425°F/Gas mark 7
Slice the potatoes evenly approx. ¼ inch thick and pat dry with kitchen paper.
Place the potato slices into a large bowl and add the olive oil. With your hand mix the potatoes in the bowl until they are evenly coated with the oil.
Add the dried herbs, salt, and pepper to the potato slices and mix well until they are all evenly coated.
Lay the potato slices flat on a lightly greased baking sheet and place them in the oven for 10-15 minutes. ( You may need to use two baking trays dependent on the size of your potatoes).
Carefully remove and turn over the potato slices and place them back in the oven for a further 10-15 minutes until they are golden brown and crispy on the outside.
Serve with your favorite dip and enjoy.
Notes
This recipe is easily adaptable to make various flavors of home fries. I have included a few suggestions that I have made in the past.
Spicy - Add a little chilli flakes to make a spicy cottage fry.
Garlic - If you are a fan of garlic add ¼ teaspoon of garlic powder.
Piri Piri - We do love adding Piri Piri seasoning and you could add ¼ teaspoon of Piri Piri seasoning.
Parsley - We usually always garnish with chopped parsley.
Serve with your favorite dip. Cottage potatoes go really well with Ketchup, Garlic dip, Ranch dressing, Sour cream & onion dip.Can I make this recipe in the Airfryer?Yes to make air fryer cottage fries follow the recipe as directed and place in the air fryer shaking halfway through.Can I change the recipe quantities?Yes, If you require a larger amount of cottage fries you can scale up and double the recipe as required but you will require additional baking sheets. For a smaller batch, you can half the recipe quantity. Bake in the oven as directed
