    When making a puff pastry pop tart why settle for less when you can go large. This Gluten free giant pop tart is so easy to make. It definitely adds a fun element to snack time and is great as a fun birthday cake pop tarts surprise for the kids on their special day.

    Pop tarts have always been popular in my house and I have never seen a gluten free pop tart in any of the shops near me. So I had to make some and I did a few recipe tests in the process.

    I made these gluten free pop tarts using puff pastry and also made regular gluten free chocolate pop tarts with a gluten free pie crust. So I think I can safely say we have tested and eaten our way through many a pop tart recently. This gluten free giant pop tart is definitely a fun dessert.

    Ingredients for a giant strawberry pop tart

    • Gluten free puff pastry - I used 2 x 280g ready rolled puff pastry sheets to make this puff pastry pop tarts.
    • Strawberry jam - I used smooth unseeded jam but you can use your preferred jam.
    • Egg - for egg washing pastry

    Pop tart topping

    • Powdered sugar - AKA Icing sugar. Always sieve the sugar to make sure the sugar is free of any lumps.
    • Cold water
    • Whole milk - I used whole milk but you can use your preferred milk.
    • Vanilla extract
    • Sprinkles

    🥣 Step by Step Instructions

    • Preheat the oven to 220°C/425°F/Gas mark 7
    • Place a sheet of rolled puff pastry on a large baking tray lined with parchment paper.
    • Spread jam evenly over the puff pastry leaving a 1cm gap all around the edges of the puff pastry.
    • On the second puff pastry sheet pierce the pastry with a fork evenly.

    • Beat the egg in a small bowl and brush the edges of the bottom puff pastry around the 1cm gap that was left.
    • Carefully place the top puff pastry layer on top of the jam puff pastry lining up the edges.
    • Gently press down around the edges with a fork to make a crimped edge sealing the pastry sheets together.
    • Brush the whole pastry with egg wash and place in the oven for around 20 minutes until the pastry has risen and golden brown in color.

    • Leave the pastry to cool for a minimum of 15 minutes before making the icing.
    • In a bowl sieve the powdered sugar. Add the water, milk and vanilla until the icing looks thick and smooth.
    • Pour icing on top of the cooled pastry and spread evenly. Add sprinkles to decorate if desired.
    • I recommend leaving the icing to set before slicing the pop tart.

    👩‍🍳 Top tip

    Always pierce the top pastry evenly to ensure that the puff pastry rises evenly. If you miss this step or don't pierce it enough it will rise unevenly in the oven. It will still taste delicious but won't look as pretty. See my recipe steps above for a photo example.

    ⚡ Substitutions & Variations

    In this recipe, I have used easy ready-rolled puff pastry as I wanted to share how to make a strawberry pop tart at home without having any baking experience. It is perfect for a beginner just starting to experiment in the kitchen or if you are looking for a no-fuss puff pastry pop tarts recipe.

    I have put together some ideas and variations you might also like to try below.

    • Chocolate pop tarts - To make Gluten free chocolate pop tarts all you have to do is substitute the strawberry jam for your favorite chocolate spread and add 2 tablespoons of cocoa powder into the icing recipe.
    • Smaller pop tarts - To make regular sized pop tarts just divide the pastry into even 4 rectangles and follow the recipe instructions.
    • Pie crust pop tart - If you prefer to make pop tarts using a pie crust just substitute the puff pastry for your preferred gluten free pie crust. I have a gluten free shortcrust pastry that will work well in this recipe that I used for my gluten free chocolate pop tarts.

    Equipment

    Puff pastry pop tarts don't require any fancy kitchen equipment. All you need for this gluten free giant pop tart recipe is a large baking tray, a fork, knife, and spoon for spread jam and icing. If your puff pastry isn't ready-rolled you will need a rolling pin to roll the pastry.

    • 560 grams Ready to roll gluten free puff pastry (2x 280g ready rolled puff pastry sheets)
    • 6 Tablespoons Strawberry jam
    • 1 Egg (for egg washing pastry)

    • 300 grams Powdered sugar (Icing sugar)
    • 2 Tablespoons Cold water
    • 3 Tablespoons Whole milk
    • 1 Teaspoon Vanilla extract
    • Sprinkles if desired

    Instructions

      I cant wait to make this recipe. Where are you finding GF puff pastry or what brand? I have never seen it before in stores.

        Hi Ashley, I used Jus-Rol gluten free puff pastry that is available in the UK. Other brands that are available elsewhere are Schar gluten free puff pastry https://www.schaer.com/en-us/p/puffpastrydough and Geefree puff pastry which can be found in the freezer section in some stores. If you try the recipe I would love it if you could let me know what Puff pastry brand you used.
