If you are a fan of ice cream and Oreos then this copycat The Kegs Billy Miner pie recipe will be a winner for you. Made with an Oreo pie crust base filled with Mocha ice cream, Topped with sliced almonds, and drizzled with lashings of hot caramel and fudge sauce. It sounds mouth-watering and tastes amazing!
When a friend told me about the Billy Miner pie from The Keg and she gave it rave reviews. I just knew I had to make a homemade version of this ice cream cake. So I wasted no time and got to work with the recipe testing as I love any reason to use gluten-free Oreos and have also used them recently in my Gluten free dirt pudding. As always I made it gluten-free.
Ingredients
- Oreos - I used Gluten free Oreos to ensure that it was gluten free and safe to eat if following a gluten free diet. You could also use your preferred crunchy chocolate cookies.
- Unsalted Butter - I melted the butter in the microwave as I find this is the quick and easy as it only takes a few minutes.
- Mocha Ice Cream - Any coffee flavored ice cream will work well in this recipe. Feel free to use your favorite coffee flavor ice cream.
- Sliced Almonds - I used ready slice almonds.
- Caramel Sauce - I used homemade caramel sauce and have included the details in the recipe card. You could use ready made caramel sauce if preferred.
- Fudge Sauce - I used homemade fudge sauce and have included the details in the recipe card. You could use ready made fudge sauce if preferred.

Instructions
- Line the bottom and sides of your springform baking tin with parchment paper.
- Remove the cream filling from the Oreos.
- Place the Oreos cookies in a food bag and using a rolling pin or wooden spoon crush them until they resemble crumbs then add to a mixing bowl.
- Melt the butter and add to the Oreo crumb mixture, Mix well until fully combined.
- Transfer the mixture into your baking tin. Spread evenly and press down firmly on the crumb mixture until it feels firm and compact in the tin. Place in the fridge to set. I recommend leaving it to set in the refrigerator for a mininum of 1 hour.
- Remove the ice cream from the freezer and allow it to soften slightly. You will want it to still be thick but be able to spread evenly on top of the pie base. (Do not allow the ice cream to turn to liquid as you will have a runny mess on your hands).
- Once the ice cream has been spread evenly over the pie base decorate the edge of the pie by topping with the sliced almonds.
- Wrap the pie tin with a couple of layers of plastic wrap and place it in the freezer for at least 6 hours to set.
Note: I have also put instructions in the recipe card for how to make the caramel sauce and the fudge sauce. You can use ready-made caramel and fudge sauce if you prefer.
Substitutions
I know that it is not always possible to find all the ingredients needed depending on where you are in the world or what stores you have locally so I have included information on some easy swaps that will work well for this Billy Miner pie recipe.
- Chocolate cookie base - Instead of gluten free oreos you can use your preferred crunchy chocolate cookies. If you don't require the pie to be gluten free then regular Oreos will be fine.
- Coffee Ice cream - You can also use any flavor of coffee ice cream if you can't find mocha ice cream. Cappuccino, espresso or cafe latte just to name a few flavors that work well for this ice crem cake.
- Fudge and Caramel sauces - You can use ready made sauce if you prefer.
- Nut Free - If you require the pie to be nut free as almonds are a tree nut. You can leave the almonds out altogether. Alternatively replace the almonds with chocolate curls or extra crushed oreos for a little crunch on top.
Storage
I find that cutting the Billy miners pie into individual slices and placing it in an airtight container and storing it in the freezer for up to 3 months. This makes it easier to remove a slice when you want a piece of the pie.

- 250 ML Heavy Cream (AKA Double Cream)

Caramel Sauce
- In a non-stick pan over low heat melt butter and sugar until sugar is fully dissolved.
- Add cream stirring continuously until bubbling and the sauce has thickened.
- Remove from the heat and transfer to a jar or container and once cooled place in the refrigerator. The caramel sauce can be reheated in the microwave when you are ready to serve the pie.
Fudge Sauce
- In a non-stick pan over low heat melt butter, sugar, cream, and chocolate until sugar is fully dissolved. Stirring continuously until slightly bubbling (Do not boil) and the sauce has thickened.
- Once the sugar is fully dissolved remove the pan from the heat and transfer the sauce into a jar or container and once cooled place it in the refrigerator.
- The fudge sauce can be reheated in the microwave when you are ready to serve the pie.
Assembling the pie
- Once the pie is fully frozen and set release from the springform tin. Slice with a sharp knife.
- Reheat the caramel and fudge sauce in the microwave and drizzle over the top of the pie using a spoon and serve immediately.
