🍋 Tips for Baking with Lemons
- Use Fresh Lemons - You can't beat using fresh lemons when making lemon desserts. Bottled lemon juice is great if you can't don't have any fresh lemons available, but the flavor from freshly squeezed lemons really makes the citrus flavor shine especially when making homemade lemon curd or other lemon desserts.
- Zest before Juicing - The lemon zest contains essential oils that give the desserts a more intense lemon flavor. Always zest before juicing as if you juice the lemon first it will make it more tricky to zest. Use a fine grater or microplane to remove the outer layer of the lemon peel without removing the white pith underneath which can be quite bitter.
- Flavor Balance - Lemons are highly acidic, and using too much can make some desserts too sour, so it's important to get the balance between sweetness and tart just right. Some desserts, like my gluten free lemon meringue pie have a sharp citrus flavor that is balanced out with the sweet meringue topping, but my gluten free lemon shortbread has more sugar which results in less overpowering citrus flavor.
- Prefer a sweeter lemon - Meyer lemons are a hybrid fruit, they are a cross between a lemon and a mandarin and have a hint of orange flavor. They are a great alternative if you prefer a sweeter citrus flavor that is less acidic.
