Easy gluten free lemonade scones are a foolproof scone recipe, Perfect for breakfast or afternoon tea. They are delicious filled with cream and jam or drizzled with a lemon glaze. If you are looking for a quick and easy recipe that doesn't require a lot of ingredients then you will love these gluten free scones with lemonade.
Scones have always been a popular choice for afternoon tea or a breakfast treat for me. Ever since I was a child I have loved all variations of scones from traditional fruit scones to cheese scones. When I thought of adding scones to my recipes I wanted to start with gluten free scones with lemonade as they are by far the easiest scones to make and delicious served with chantilly cream and jam or easy lemon curd!

If you are a fan of traditional scones then you will also enjoy this foolproof scone recipe with cream and lemonade. You might also be surprised to know that you won't really even taste the lemonade. Although made slightly different and don't require rubbing butter and flour together which makes them quick and easy scones with lemonade.

Ingredients
- Gluten Free Self Raising Flour - (Plus extra four for dusting) I used Doves free from self raising flour. If gluten free self raising flour isn't available then you can make self raising flour at home by mixing 2 teaspoons of baking powder with every 125 grams of Gluten free All purpose flour (Plain flour in the UK).
- Sugar - Used to add a little touch of sweetness. I used white granulated sugar but caster will also work well.
- Baking Powder - Scones don't rise too much but a little baking powder will help them rise slightly.
- Heavy Cream - Also known as Double cream. Be sure to use full-fat cream for best results.
- Lemonade -Well it wouldn't be lemonade scones without the lemonade! Always use fizzy lemonade as the fizz will react with the flour and baking powder making the scones soft and fluffy. I have tested with various brands such as Sprite, Schweppes, and the supermarket's own brands and they all work well.

Instructions
- Preheat the oven to 200°C/400°F/Gas Mark 6. Prepare a baking sheet with parchment paper.
- In a large bowl mix together flour, Baking powder, and sugar.
- Add cream and lemonade to the flour and sugar mixture.
- Fold in gently until fully combined and resembles dough but be sure not to over mix. (Lemonade scone dough will be soft and sticky).
- Pour out dough onto a lightly floured surface. Knead the dough gently as you don't want to overwork the dough.
- Gently shape the dough into a disc shape around 3cm thick. Using a 2.5inch (6cm) cutter press straight down without twisting the cutter to make individual scones. ( I recommend coating the cutter in between cuts as the scone dough is quite sticky)
- Place the scones carefully onto a lined baking sheet placing them close together with the sides of each scone slightly touching. (Keeping them close together will help them rise slightly).
- Brush the top of each scone with a little milk. Place in the oven and bake for approx. 15 minutes or until golden brown.
- Place on a cooling rack.
Hint: Try not to over-mix or knead the dough as this will result in dense tough lemonade scones. When using the cutter be sure to press straight down on the dough and do not twist!
Variations
I love to eat scones sliced in half and filled with jam and cream but there are other variations that also taste amazing.
- Lemon Glaze - Once cooled drizzle a little lemon glaze over the top of your scones for a fresh sweet and zesty flavor, Making them perfect for breakfast!
- Lemon Curd - If preferred you can fill with some lemon curd instead of jam.
- Lemon Juice - If you want them to taste more like lemon scones, You can add 1 teaspoon of lemon juice when adding the lemonade to the flour and sugar mix.
Equipment
Making gluten free scones with lemonade really doesn't require any special kitchen equipment. All you will need is:
- Large bowl
- Wooden spoon
- 2 ½ inch (6cm) Cookie cutter
- Baking sheet
- Parchment paper
Storage
Store in an air-tight container for 1-2 days. I am sure that they would hold up longer but I feel that the Lemonade scones are at their best when they are fresh on the day that they are baked.
They are suitable for freezing. Once the lemon scones have fully cooled place them in a freezer bag or container. Thaw at room temperature.
Gluten free Baking tips
- Gluten Free Flour – I used a shop bought Gluten free Self raising flour blend from Doves Farm Freee from range. Which is a flour blend of Rice, Potato, Tapioca, Maize and Buckwheat flour. I have had feedback that others have used other Gluten free self raising flour blends with my recipes that have worked well. I would love to know what flour blends worked for you. - Kitchen Scales - Using digital scales is recommended when baking. I always measure using scales and in grams as baking is a science. When baking gluten-free it is essential to weigh out ingredients to get the best results! There is no need to purchase expensive digital scales and you can find them available cheaply online. (Although for small amounts I will use spoon measurements)
- Oven Temperatures - Your oven temperature may be slightly different. As all ovens vary in temperature and the baking time is used as a guide. Some ovens run hotter than others. You could invest in an oven thermometer to be more accurate.
