I love the simplicity of oatmeal cookies and when developing this recipe I wanted to be straight forward that they are easy to make and perfect for someone just starting baking in the kitchen.
I took my gluten free chocolate chip oatmeal cookies and my Mini egg cookies recipes as a starting point and after a few recipe tests and tweaks, these are the finished product.
My oatmeal chocolate chip cookies use brown butter which this recipe does not meaning it has fewer recipe steps and is simpler to make but if you love the flavors of brown butter in cookies it can easily be used in this recipe too.
📋 Ingredients Notes
- Unsalted Butter - Use high-quality butter for the best results. I prefer to use unsalted butter to control the salt content in the cookies but if you only have salted butter available omit the additional salt in the recipe.
- Sugar - I used a mix of light brown sugar and granulated sugar.
- Egg (Weighs 50g without the shell) Room temperature
- Vanilla extract - Use good quality pure vanilla extract for additional flavor.
- Gluten free All-purpose flour - I used a pre-made gluten-free flour blend. See my notes below for additional information on gluten-free baking and details about the specific flour blend I used.
- Baking Powder & Baking Soda - Some brands of baking powder may have ingredients that contain gluten. Always be sure to check the label.
- Xanthan gum Omit if the flour blend already contains xanthan gum.
- Gluten free Oats - I used gluten-free old-fashioned rolled oats, and in my opinion, they are the optimal choice for an authentic oatmeal cookie. They cook quicker than steel-cut oats and offer a softer, creamier texture. Ensure that you use certified gluten-free oats. Some people cannot tolerate even gluten free oats if you are looking for gluten free raisin cookies without oats then try my gluten free chocolate chip cookies and replace the chocolate chips with raisins.
- Raisins - They wouldn't be raisin cookies without them but don't worry if you are not a fan of raisins you can switch them out with something else such as chocolate chips.

- Dairy Free - To make dairy free oatmeal cookies use your preferred dairy free butter block.

- Cinnamon - Add ½ teaspoon of ground cinnamon to the cookie dough. I often do this to add another layer of flavor to the cookies which is perfect for the holiday season.

Step 1: Melt butter and once cool add to sugar and mix until creamy.
Step 2: In a separate bowl combine flour, oats, baking soda, baking powder, salt, Xanthan gum, and gluten free oats.
Tip: Melting the butter in the microwave on short blasts will prevent the butter from burning.
Step 3: Add the egg and vanilla extract into the butter and sugar mixture, then beat until smooth.
Step 4: Add the dry ingredients to the wet ingredients, and mix with a wooden spoon until it has all combined.
Tip: Waiting until the butter has cooled slightly before adding the egg as we don't want the egg to start cooking with the heat from the butter.
Step 5: Add in the raisins until evenly distributed in the cookie dough place the cookie dough in the fridge for 15 minutes to firm up.
Step 6: Use a cookie scoop or ice cream scoop to make cookie balls each weighing 50g each and place them on the lined baking sheet and return to the fridge to chill for a further 15 minutes.
Tip: Weighing each cookie ball individually ensures that they are all the same size and will bake evenly.
Step 7: Place the cookie dough on the baking sheets leaving around 2 inches between each cookie. I would not put more than 6 cookies on each baking sheet as you want to allow plenty of room for them to spread.
Step 8: Place the baking sheet in the center of the oven and bake for around 15 minutes, or until the edges of the cookies are a slight golden color. Remove them from the oven and let them cool on the baking sheet until they are firm before transferring them to a cooling rack

- Baking by weight - For precise measurements in baking, particularly when working with gluten-free recipes, it is strongly advised to utilize digital scales. This is crucial for success when baking. Affordable digital scales are easily accessible online. However, for smaller quantities, I do resort to spoon measurements.
- Oven Temperatures - Oven temperatures can often be slightly different. Ovens can vary in temperature and the baking time is used as a guide. Some ovens run hotter than others. You could invest in an oven thermometer to be more accurate.

- ½ teaspoon Salt
- ¼ teaspoon Xanthan gum Omit if the flour blend already contains xanthan gum.
- 100 grams Gluten free Oats
- 100 grams Raisins
Instructions
How to make Gluten Free Oatmeal Raisin Cookies

- Line 2 baking sheets with parchment paper.
- Use a cookie scoop or ice cream scoop to make cookie balls each weighing 50g each and place them on the lined baking sheet and return to the fridge to chill for a further 15 minutes.
- Preheat the oven to 170°C/325°F/Gas mark 3 while the cookies are chilling.
- Place the cookie dough on the baking sheets leaving around 2 inches between each cookie. I would not put more than 6 cookies on each baking sheet as you want to allow plenty of room for them to spread.
- Place the baking sheet in the center of the oven and bake for around 15 minutes, or until the edges of the cookies are a slight golden color. Remove them from the oven and let them cool on the baking sheet until they are firm before transferring them to a cooling rack.
