    Easy Sausage Tray Bake

    This easy sausage tray bake recipe is full of flavor and as it is a one tray sausage bake and cooked in the oven it requires very little hands on time. Making these oven baked sausages cooked in gravy perfect for an easy but tasty family weeknight dinner!

If you are searching how to cook sausage in the oven, easy one pan recipes or a simple sausages in gravy casserole to make for your family then this is the recipe for you with the added bonus of being a cheap gluten free meal without compromising on flavor!

    • Family weeknight dinner - Makes a perfect week night family meal with only 15 minutes of prep time and ready to serve within an hour.
    • Adaptable - Add in what vegetables you have available. Making this sausage traybake great to use up any seasonal veg you have already.
    • Budget friendly - Using simple easy to find ingredients makes this a budget friendly family meal.

    📋 Ingredients Notes

    Labeled ingredients for sausage traybake.
    • Sausages - I used good quality gluten free pork sausages. See is sausage gluten free for more information if you are following a gluten free diet.
    • New potatoes - Also known as baby or mini potatoes. You can use medium sized potatoes quartered.
    • Vegetables - I used carrots and red onions when photographing this recipe but I have also added additional vegetables in the past such as parsnips, brocolli and brussels sprouts. You can really add your favourite seasonal vegetables or whatever you have available.
    • Mixed herbs - I used a mix of thyme, oregano and rosemary. I also added a few sprigs of thyme but this is optional.
    • Beef stock - You can use beef broth if preferred but I feel that beef stock gives a richer flavor to the gravy. I used Knorr beef stock cubes as they are gluten free. Always be sure to check that the stock used is gluten free as some brands may contain gluten.
    • Cornstarch - Used to thicken up the gravy to give a nice consistency that isn't too runny or too thick. Cornstarch is known as Cornflour in the UK.

    ⚡ Substitutions & Variations

    • Vegetarian - instead of pork sausages you can use your preferred vegetarian sausage, and substitute the beef stock for vegetable stock.
    • Seasonal vegetables - The great thing about sausage traybake is you can add your preferred vegetables or whatever is in season for example adding in sliced bell peppers, sliced parsnips, or brussels sprouts.
    • Chicken stock - If you prefer chicken stock then this will also work well.

    🥣 Step by Step Instructions

    Below is a brief step-by-step process with photos of how to make Sausage tray bake. See the recipe card below for more detailed recipe instructions.

    Step 1: Cut the the vegetables into even sized pieces, Slicing the new potatoes into halves, Cutting the carrots into even sizes and quartering the onions into wedges.

    Step 2: Place all the vegetables into the baking tray and pour over the oil and mixed herbs, salt and pepper. Toss together until all the vegetables are evenly coated in the oil and herbs. Space out the vegetables until they are arranged in a single layer.

    Step 3: Place the sausages on top of the layer of vegetables and place in the oven for 20 minutes.

    Step 4: Just before the tray is due out the oven. Place the cornstarch into a small bowl and add 2-3 tablespoons of cold water until it resembles a smooth slurry with no lumps. Mix the slurry into the hot beef stock until fully combined.

    Step 5: Carefully remove the tray from the oven and turn over the sausages. Pour the beef stock mix into the tray.

    Step 6: Place the sausage traybake back in the oven for another 25 minutes or until the sausages are a nicely browned and the vegetables are soft.

    Notes: Always check that the sausages are cooked through as some ovens may run cooler than others.

    How to store sausage traybake

    Once fully cooled cover and place in the refrigerator for up to 3 days.

    Can I reheat sausage tray bake?

    Yes, sausage traybake can be reheated in the microwave in a microwave safe dish or simply by placing the tray back in the oven for approx 15 minutes until hot.

    Can I freeze sausage traybake?

    I haven't tested freezing the traybake and I don't recommend freezing.

    Are sausages gluten free?

    Not all sausages are suitable if you are following a gluten free diet as most brands may contain wheat flour. Always check the label to be sure that the sausages do not contain gluten. Some brands that have a gluten free sausage range are Tesco finest pork sausages, Heck sausages, Beelers, Hatfield, Wellshire farms, and Debbie and Andrews.

    Ingredients

    Ingredients for Sausage traybake

    • 2 tablespoons Oil I used vegetable oil
    • 8-10 Sausages I used good quality gluten free pork sausages
    • 10 New potatoes Also known as baby or mini potatoes. You can use medium sized potatoes quartered.
    • 3 Carrots
    • 2 Red onions
    • 2 teaspoons Mixed herbs I used a mix of thyme, oregano and rosemary.
    • ⅛ teaspoon Salt and Pepper
    • 400 ml Hot beef stock You can use chicken stock if preferred. I used Knorr beef stock cubes as they are gluten free.
    • 1 tablespoon Cornstarch also known as Cornflour in the UK.

    Instructions

    How to make sausage traybake in the oven

    • Preheat the oven to 200°C/400°F/Gas mark 6
    • Cut the the vegetables into even sized pieces, Slicing the new potatoes into halves, Cutting the carrots into even sizes and quartering the onions into wedges.
    • Place all the vegetables into the baking tray and pour over the oil and mixed herbs, salt and pepper. Toss together until all the vegetables are evenly coated in the oil and herbs. Space out the vegetables until they are arranged in a single layer.
    • Place the sausages on top of the layer of vegetables and place in the oven for 20 minutes.
    • Just before the tray is due out the oven. Place the cornstarch (Cornflour in the UK) into a small bowl and add 2-3 tablespoons of cold water until it resembles a smooth slurry with no lumps. Mix the slurry into the hot beef stock until fully combined.
    • Carefully remove the tray from the oven and turn over the sausages. Pour the beef stock mix into the tray. Place the tray back in the oven for a further 25 minutes or until the sausages are a nicely browned and the vegetables are soft.

    Notes

    Gluten Free: Always check the ingredients label of the sausages and beef stock to be sure as some brands contain gluten.
    Sausages: For best results use good quality pork sausages. I used gluten free good quality pork sausages. 
    Potatoes: You can use larger potatoes quartered if you do not have new potatoes available.
